Shama Joshi came to the food business from a different route than most: she spent years at Microsoft in the tech industry before opening her successful Indian food truck. That truck: Roll Ok Please and its kathi rolls and fresh paneer was loved by everyone, including Anthony Bourdain.

She is now a passionate teacher, bringing her knowledge of regional Indian cuisine to many. Shama loves demystifying Indian culinary techniques, and showcasing the incredible diversity of dishes and flavors found in Indian cooking. Shama is an utter delight to be around, and her class is sure to be a thrill to attend.

Shama will be teaching us a Thali meal. We will start with the condiments — a green mango and coconut chutney, and a cucumber yogurt raita with peanuts. Next will be a potato sabzi cooked in curry leaf tadka. Shama will then take us through a mustard fish curry made with fried fish in a sauce of shallots, tomatoes and freshly ground mustard paste.

The thali will also include a puffed whole wheat fry bread called poori and Jeera rice — basmati rice in a cumin and ghee seasoning.

It will be a perfect summer afternoon at the farm, with Shama here to guide us through this Indian thali meal.
