Sunday August 25th Sicilian Summer Lunch with Marie Rutherford
Marie Rutherford is a gifted cook, and a generous spirit; the perfect combination to take us through this menu at the farm. She is committed to cooking with fire; using the wood-fired oven here, creating rich, rustic flavors with great local products. Marie spent time cooking in Normandie and Florence before returning to Seattle where she cooked for years at Le Pichet, roasting chickens with finesse. She moved on to Boat Street Cafe and later The Whale Wins, where she helped created many of the signature dishes there that we all love.
For this class Marie will take us through all of the steps necessary to make a perfect Sicilian summer meal. She will begin with Arancini, those beautiful Italian fried rice balls with pesto and zucchini, and then Prupetti, Sicilian meatballs with corn brodo and tomato. Marie is the master of the wood oven and will teach us how best to use the fire to cook clams with roasted fennel, potato, lemon, and garlic. For the final course she will prepare a classic Marie dessert: a cream and mascarpone fool with fresh stone fruit. By the time of the class we should have beautiful plums on the trees.
