Gabriel Chavez came to Seattle twenty five years ago from Durango and started working at The Boat Street Cafe together with his mother Veronica. Nearly a decade ago he opened Chavez, a beautiful restaurant on Capitol Hill. Over the years since he has worked for Cantinetta and Como and now has opened a large, Mexican restaurant in Kirkland named El Encanto.

Gabriel has agreed to come out to the farm this summer together with his mother Veronica to make some of his favorite dishes. His mother will be teaching us how to make her Quesadillas de flor de calabaza made with fresh masa. Gabriel will continue on giving us the skills to make Branzino zarandeado — a full fish, split open, marinated and grilled over coals. Also on the menu will be Rock fish ceviche, arroz blanco and a coffee flan to finish off the class.

Gabriel has worked in restaurant kitchens for many years and has a tremendous knowledge of cooking and together with his mother they bring a deep knowledge of Mexican cuisine. It is always a treat to have them teach a class at the farm.
